What’s For Dinner? May 12-18

I tend to make sandwiches or grill burgers and chicken then make some frozen fries or chips with vegetables on the side. It’s still a little chilly to eat outside, even though our deck is all set up and ready for it. Even though I don’t like it to be really hot outside, bring on summer!
Here’s what’s for dinner this week:

Saturday – Hamburgers (lunch); Monterey Chicken Grilled Cheese (dinner)

I hope to make: Glazed Lemon Poppyseed Muffins, Eggless Cookie Dough (yeah, it’s that kind of week!). My husband says he’ll either be trying cinnamon roll pancakes or cheesecake pancakes Sunday morning. Stay tuned for that.

A MONTH of Recipes?!?!
Posted: April 25, 2013 Filed under: Food | Tags: Meals Leave a comment »What is happening?! This post is worse than the one before it! I can’t believe I’ve let myself go this long without sharing with you what we’ve been enjoying for dinner. I hope I’ve saved all the links.
Now that spring is here (sort of) we’ve been outside a lot. We’re trying our hand at landscaping and have bought new patio furniture. I’m itching for it to be warm enough to be outside at dinner time. It’s still a little chilly at night. Last year we were outside everyday there wasn’t rain. I love eating outside. It’s so easy to clean up!
I’ll keep this post’s format the same as the last: List recipes with a little note after them. And HOPEFULLY I’ll have my act together Sunday or Monday with a weekly meal plan and a blog post for you! Here’s what WAS for dinner:
Ranch Crock Pot Pork Chops – easy and YUM!
Crispy Chicken Costoletta – another YUM!
Soft Almond Sugar Cookies – gimme more!
Slow Cooker Chicken Ranch Pasta
Chicken Bacon Alfredo Pizza – this changed up Friday’s usual pepperoni
The Amazing Amish Cinnamon Bread Alternative – not as good as the original, but much faster and smells great when baking!
Polka Dot Macaroons – a spring favorite
Slow Cooker Chicken Enchilada Soup
Lemon Poppyseed Yogurt Pancakes – husband really enjoyed these
Slow Cooker Granola – this has great flavor, but really needs to be watched. It burned on me.
Banana Cream Cheesecake – husband made this one because he loves banana cream. Neighbor needed the recipe!

3 Weeks of Recipes?!?!

I’ve saved all my bookmarks of recipes and everyday I look at them and think “Yeah, I gotta blog that”. Then I don’t do it. I’ve pushed myself to the deadline. In a few hours, my son and I are flying to Arizona for a week to visit my sister’s family. So excited! But I’m worried that if I power down my iPad, I’ll lose all of the saved recipes. So, here we are. I’ll just share them with you in a list with some thoughts behind them. Deal? Good!
Strawberry Pretzel Dessert – this is a family favorite and sooo yummy. My husband made it for a March Madness party at work. The recipe calls for raspberries, which I prefer, but he likes strawberries. Both work equally as well.
Skinny Funfetti Cupcakes – these were ok for a low calorie treat. But not as good as the real thing!
Popovers – YUMMY with cinnamon honey!
Broccoli Wild Rice Soup – another family favorite that is LIGHT!
Creme Brulee French Toast – this makes it’s own syrup and is delicious!
Buffalo Chicken Dip – we can’t seem to get enough of this stuff. It was a great March Madness snack.
Crockpot Italian Chicken – easy and delicious
Corned Beef Hash – I cook the corned beef in the crockpot all day then make this hash for dinner. Along with Irish Soda Bread from Martha Stewart’s Baking Handbook, it’s the perfect St. Patrick’s Day meal. We finished it off with this rich Stout Cake.
One evening my husband and I hosted a mac and cheese bar party. I used this basic recipe for the cheese sauce, switching out the cheese. We had cheddar sauce, pepperjack sauce, and a gouda sauce. Then the guests choose which meats, veggies, and toppings they wanted to mix in. The party was a hit and I think we’ll do it again!
There you have it, a brief roundup of what we’ve been eating the past few weeks. I’ll be taking this next week off, as I won’t be home to cook. Right when I get back, it’ll be Easter and time to get in the kitchen! Have a good week. What are you having for dinner?
