Sigh. The holidays are over. The world will be settling back to its normal routine. I’m looking forward to it. We immensely enjoyed our holidays and had a lot of leftovers. Sugar peanuts is one of them. It’s a highly addictive snack my husband’s family has been making for Christmas for years. Please note I said highly addictive. You may want to make a double batch… or more. They wouldn’t be left over if we didn’t have so much other food in the house!

2 cups raw peanuts
1 cup sugar
1/2 cup water
Combine all ingredients in a heavy saucepan. Cook over medium heat. Stir until the mixture crystallizes and coats peanuts, about 10-15 minutes. Spread onto a buttered 15x10x1 inch pan. Salt to taste. Bake for 15 minutes at 300 degrees. Stir. Salt and bake for 15 minutes more. Allow to cool before eating, unless you like the taste of warm peanuts. Enjoy!
My mother-in-law was visiting the first time I made these, which was a good thing because I wasn’t sure what the mixture was supposed to look like in the saucepan. You basically boil all the water out and it will look like how the peanuts look in the picture, but hot. The look doesn’t change while baking.
