Family movie night is one of my favorite nights at our house. We move the living room furniture out of the way, the kids bring down their mattresses and bedding, and I make a snack. We usually do this Fridays or Saturdays after dinner. The kids got some new movies in their Christmas stockings and this will be the last evening to enjoy the glow of the Christmas tree. Tonight’s showing is Horton Hears a Who and we are enjoying Honey Nut Popcorn. It is so cozy.
I got the recipe from a fabulous book called For Popcorn Lovers Only by Diane Pfeifer. There are so many fun and great recipes in here. And some unexpected. If you like popcorn, I highly suggest you check it out.
Honey Nut Popcorn
adapted from For Popcorn Lovers Only by Diane Pfeifer
6 cups popped popcorn
2 cups Rice Chex cereal
1 cup toasted almonds
1 cup honey roasted peanuts
1/2 cup butter
1/2 cup honey
salt, to taste
Preheat oven to 350 degrees F.
Combine popcorn, cereal and nuts in a large greased roasting pan.
Combine butter and honey in a 2-quart glass dish. Microwave on high until melted. Stir. Dribble over popcorn. Toss with hands to coat thoroughly.
Bake 10 minutes, stirring every 5 minutes. Watch for burning! Salt to taste.
Allow to cool and enjoy!
